想做Tiramisu好久了,難得一股作氣買好了材料

趁還有熱情時趕緊動手

search 每位網友的分享,決定選擇簡單的作法

成品如上,製作過程除了蛋白打發失敗一次之外

全程耗時1小時左右,算是糕點中好做的了

材料:(3人份)

雞蛋          3顆

MASCARPONE CHEESE    250g

手指餅乾     適量

白砂糖        75g

無糖可可粉

濃縮黑咖啡   300cc

Marsala       30cc

作法:

1.分離蛋白及蛋黃

2.3顆蛋黃+MASCARPONE,刮刀拌勻

3.3顆蛋白+砂糖,用攪拌機至打發

4.打發的蛋白霜分次加入蛋黃起司醬中混和,備用

5.將Marsala倒入黑咖啡中,並將餅乾雙面快速濕沾

5.準備適當容器,依序排列餅乾>起司醬>可可粉>餅乾>起司醬>可可粉

6.冷藏至少2小時

 

<打發蛋白技巧>

1.新鮮雞蛋,分離蛋白時,碗內不可有水、蛋黃、油

2.打蛋器,慢速2min,>有泡沫出現

3.放糖,中速1min,>泡沫變少

4.持續   中速2-3min,>蛋白成乳霜狀

5.         高速1-2min,>蛋白霜,末端尖挺即成

 

<Recipe of Tiramisu > from GALBANI MASCARPONE

Ingredients for 6 people

6 eggs,separated;

500g mascarpone;

150g sugar;

300g sponge fingers;

3/4 litre of strong coffee;

50ml brandy or amaretto;

cocoa powder

1.Beat the eggs yolks with suggar until they are creamy and frothy.

2.Mix in the mascarpone and the brandy or amaretto.

3.Whisk the egg whites until stiff and fold into the mixture.

4.Lightly soften the sponge fingers in the coffee.

5.Arrange the sponge on the base, cover with a layer of the mix and repeat.

6.Put the tiramisu in the fridge for at least 2 hours.

7.Sprinkle with cocoa powder before serving.
